HNC Professional Cookery

If you seek a stimulating programme that prepares you for a career as a chef, then the HNC Professional Cookery is for you. The course is offered in association with Motherwell College, renowned as one of Scotland’s leading institutions for hospitality skills programmes. The programme includes practical kitchen skills and will develop a knowledge and understanding of running a professional kitchen and managing staff. The course, which blends theoretical components with plenty of practical application includes the following units;

• Professional cookery
• Food classification and purchase
• Cold Kitchen
• Hot kitchen
• Patisserie
• Pastry
• Hospitality supervision
• Hospitality financial control
• Food hygiene
• Integrated Production cookery

Entry requirements

• Professional cookery experience, and;
• SVQ Level 3 Kitchen & Larder, or;
• 1 Higher or equivalent qualification in a related subject area.
